I have served “dressed up” cheese crumpets for afternoon tea and in my opinion this is a fair contender to traditional afternoon tea sandwiches. The idea of Welsh rarebit crumpets comes from the week magazine, I have changed the recipe to make it suitable for vegetarians – you will definitely find people reaching for more than one.
The cheese mixture can be kept in the fridge for 24 hours before serving.
Makes 12 crumpets | Ideal for afternoon tea
3 large egg yolks (keep the whites for meringues)
150 mls double cream
1 1/2 teaspoons mustard powder
350 grams grated extra mature cheddar
Salt and pepper to taste
- Whisk egg yolks, cream, mustard, salt and pepper
- Add cheese and mix until blended
- Toast crumpets and spread over cheese mixture
- Sprinkle with paprika and place under the grill for about 5-7 mins until the cheese has melted and and looks golden
