Welsh rarebit crumpets

I have served “dressed up” cheese crumpets for afternoon tea and in my opinion this is a fair contender to traditional afternoon tea sandwiches. The idea of Welsh rarebit crumpets comes from the week magazine, I have changed the recipe to make it suitable for vegetarians – you will definitely find people reaching for more than one.

The cheese mixture can be kept in the fridge for 24 hours before serving.

Makes 12 crumpets | Ideal for afternoon tea

12 crumpets
3 large egg yolks (keep the whites for meringues)
150 mls double cream
1 1/2 teaspoons mustard powder
350 grams grated extra mature cheddar
Salt and pepper to taste

  1. Whisk egg yolks, cream, mustard, salt and pepper
  2. Add cheese and mix until blended
  3. Toast crumpets and spread over cheese mixture
  4. Sprinkle with paprika and place under the grill for about 5-7 mins until the cheese has melted and and looks golden
