Strawberry milkshake cupcakes

A vanilla cupcake topped with a frosting made with Nesquik strawberry powder. The frosting is so easy to make and has a lovely soft picture colour. The milkshake powder is sweet enough on its own so there is no need to add any additional sugar to the frosting.

Serve at room temperature and store in the fridge.

Makes 12 cupcakes| Baking time 15-20 minutes at 180 C

Utensils required: Electric whisk| Measuring cups & spoons & scale| 12 cup muffin tin

Vanilla cupcakes:
90 grams unsalted butter
1/2 cup (110 grams) castor sugar
2 large eggs
1 tsp vanilla extract
1 cup (150 grams) self raising flour
1/2 tsp baking powder
1/3 cup (80 mls) milk

    1. Preheat oven to 180 C
    2. Line the muffin tin with paper cases
    3. Cream butter and sugar until light and fluffy
    4. Add eggs one at time, beating well after each addition
    5. Add vanilla and mix until combined
    6. Fold in flour alternatively with milk
    7. Spoon cake batter into paper cases and bake for 15-20 minutes or until a cake tester comes out clean
    8. Transfer to a wire rack to cool completely

Strawberry milkshake frosting:
1 cup (250 mls) double cream
5 tbsp Nesquik strawberry flavoured powder or any other strawberry flavoured powder

  1. Mix strawberry powder with cream and beat until soft peaks form
  2. Spoon or pipe over cupcakes
