Quick and yummy coconut biscuits

Very easy to make crisp biscuits, which are a great accompaniment with tea or coffee.

They will keep for 1 week in an airtight container.

Makes 35 biscuits | Quick & easy | Baking time 10-12 minutes at 180 C

Utensils required: Electric whisk|measuring cups & spoons & scale| 2 x baking trays

150 grams unsalted butter –  softened
3/4 cup (165 grams) castor sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups (225 grams) plain flour
1 cup (80 grams) desiccated coconut plus extra for topping if desired

  1. Preheat oven to 180 C
  2. Line 2 baking trays
  3. Cream butter and sugar
  4. Add egg and vanilla and beat until combined
  5. Gently mix in flour and then coconut
  6. Roll into small balls and flatten between your palms and if desired press in extra coconut on the top of the biscuits
  7. Bake for 10 to 12 minutes until a light golden colour
  8. Transfer to a wire rack to cool completely
