Peanut butter bars

Peanut butter barsThis recipe requires Reese’s peanut butter chips, which you will need to get from an American shop or order off Amazon UK and are rather expensive but worth it! Alternatively you can use smooth peanut butter and add dark chocolate chips – see substitutes in pink*.

135 grams unsalted butter OR 100 grams unsalted butter plus 4 tablespoons smooth peanut butter
1 1/4 cups (187 grams) flour
1 1/2 teaspoons baking powder
1 1/3 cup (290 grams) soft light brown sugar
2 large eggs
1 teaspoons vanilla extract
1 cup (170 grams) Reese’s peanut butter chips OR 100 grams dark chocolate chips

  1. Preheat to the oven to 170 degrees C
  2. Grease and line a 20×20 cm baking tin
  3. Melt butter (and peanut butter*) and cool slightly
  4. Mix flour, baking powder and sugar in a medium size bowl
  5. Whisk eggs and add vanilla and then add melted butter and whisk again
  6. Make a well in the flour and pour in the melted butter mixture, mix with a wooden spoon until combined
  7. Fold in peanut butter chips (or chocolate chips*)
  8. Bake for 30-35 minutes until a light golden brown
  9. Cool in the tin for about 30 minutes before cutting into slices
  10. Drizzle with dark chocolate if desired
