Easy chocolate cake slice

This is a very easy chocolate cake to make and is so lovely and indulgent. It’s like a cross between a brownie and chocolate cake. All you need is a wooden spoon and saucepan to mix all the ingredients together.

The slices with frosting can be frozen for up to one month and then defrosted on day of serving. Make sure you place in a sealed container in a single layer. Serve at room temperature.

Makes 18-24 slices | Baking time 25 minutes at 190 C

Rich chocolate cake

150 grams salted butter
100 grams white granulated sugar
200 grams light soft brown sugar
112 grams flour
70 grams cocoa powder
1 tsp bicarb
5 medium eggs – beaten with a fork
1 tsp vanilla

  1. Preheat oven to 190 C
  2. Line the 20×30 cm tin with foil
  3. Melt butter over medium heat, remove from heat and add the sugars
  4. Sift flour, cocoa and bicarb into the saucepan and mix with a wooden spoon until mostly combined
  5. Add eggs and vanilla and mix with a wooden spoon until combined
  6. Pour into prepared tin and bake for 25 minutes or until the top looks set
  7. Leave for 10 minutes to cool in the tin, then turn out onto a wire rack to cool completely
  8. Spoon over the frosting

Chocolate glaze

80mls double cream
1 tbsp golden syrup
100 grams dark chocolate – 70 % cocoa solids

  1. Heat cream over medium heat until it starts to form small bubbles, remove from heat and stir in chopped chocolate and golden syrup
  2. Once cool, spoon over cooled cake and cut into squares
