Cherry cheesecake bars

A cheesecake slice dotted with cherries on a brownie base, cherries and chocolate make a good combination and this bar seems to compliment that combination. Take care when spreading the cheesecake batter over the brownie base so as to prevent the two from mixing however it does not matter if a little of the brownie batter mixes into some of the cheesecake mixture as it will still taste good. I like to pat the cherries dry with paper towels before using so as to reduce the moisture and also I push the cherries into the mixture until they are almost covered but still peaking out. This slice will keep for about six days in the fridge and is best served the day after it is made.

Utensils required: Food processor|Electric whisk|Measuring cups & spoons OR scale|Spatula|20 x 20 cm square tin

Cheesecake ingredients:

300 grams cream cheese
4 tablespoons sour cream
2 teaspoons flour
5 tablespoons granulated white sugar
1 large egg
1 teaspoon vanilla extract
1 tin of cherries without pips – drained and cherries patted dry with paper towels

Brownie base ingredients:

50 grams dark chocolate (50-70% cocoa)
125 grams unsalted butter
1 cup (220 grams) soft brown sugar
1 teaspoon vanilla
2 large eggs
1/2 cups (75 grams) flour
1 tablespoon cocoa


  1. Line and grease a 20×20 cm square tin and preheat oven to 170 degrees C
  2. Cheesecake part:
    1. In a food processor add all the cheesecake ingredients except cherries and process until blended (about 1 minute)
    2. Set aside
  3. Brownie base part:
    1. Melt dark chocolate and butter over simmering water
    2. Place sugar in a medium size mixing bowl, add melted chocolate and beat until well combined
    3. Add vanilla and mix
    4. Add eggs one at a time beating well after each addition
    5. Add flour and cocoa to egg mixture, beat briefly on low speed and then mix by hand until just blended
  4. Pour the brownie mixture into the prepared pan, spoon cheesecake mixture evenly over chocolate mixture and smooth carefully with a spatula until cheesecake covers brownie mixture
  5. Press cherries evenly over cheesecake mixture
  6. Bake for 30-35 minutes until top looks just about set
  7. Cool completely in tin and refrigerate for at least 12 hours before before cutting into slices and serving
  8. Serve chilled
