Cardamom biscuits

Cardamom biscuitsA crisp biscuit, good for cookie shapes and easy to make. Also great for heart shaped Valentine’s Day biscuits.

I usually bake in batches with the rest of the dough kept in the fridge until ready for baking. You can keep the dough wrapped in the fridge for about three days and once baked the biscuits will keep for about one week in an airtight container.

Cardamom valentine biscuits

Makes 30 – 50 depending on shape|Baking time 8-15 minutes plus chilling| 180 C

Utensils required: Electric whisk|measuring cups & spoons & scale|baking trays

2 cups (300 grams) plain flour
1 teaspoon ground cardamom
1 teaspoon baking powder
150 grams unsalted butter
1/2 cup (100 grams) light brown soft sugar
1/2 cup (110 grams) castor sugar
1 large egg

  1. Sift flour, baking powder and cardamom – set aside
  2. Cream butter and sugars until light and fluffy, add egg and beat until combined
  3. Add flour and mix until just combined
  4. Chill the dough, wrapped in plastic wrap in the fridge for at least 30 minutes
  5. Preheat oven to 180 C
  6. Grease and line baking sheets
  7. Roll out dough on a lightly floured surface to about 4 mm thick and cut into desired shapes
  8. Bake until a light golden colour with edges a little darker – about 8-10 minutes for smaller shapes and 15-18 minutes for medium to larger shapes
  9. Cool for 5 minutes before transferring to a wire rack to cool completely
